Fixed Dinner Menus

From “Ask Kit!”:

Q: I don’t want to fix several meals for different guests on the same night. So how do I deal with that one? Just offer a steak/buffalo dinner and forget the cheaper dinners?

A: If you are going to offer dinner to your guests, set your menu and let them decide if they want to eat with you or go into town. Consider having one dinner of the week be your steak/buffalo dinner and the other days offer your other menus.

The steak/buffalo dinner might be enough of a calling card that you should offer that on a slow day (Thursday or Sunday, for example) as a way of expanding your business beyond the weekend crowd you expect.
